protein-packed Porridge

Are you tired of oatmeal? Do you love hot cereal but feel like you could be getting more bang for your protein buck? Here’s a fairly quick, high protein, hot cereal option that will definitely keep you going throughout your morning.

ingredients

1/4 cup TVP
1/4 cup quinoa
1/3 cup quick oats
1 Tbsp brown sugar (or 1/4 cup maple syrup)
1/2 tsp cinnamon (or cardamom)
1/2 tsp vanilla (optional)
Fresh fruit of choice (I use sliced apples or bananas)
2 Tbsp seeds of choice (pumpkin, sunflower, hemp)
3 cups cold water
Your fave plant milk (I use soy)

instructions

Bring water to a boil in a pot. Add sugar, TVP, quinoa and oats while stirring. Turn heat down to low and prop a lid on the pot to allow steam to escape. Watch for boiling over until the mixture is just simmering. Add cinnamon, vanilla and fruit. Stir. Cover the pot, stirring occasionally until quinoa is fully cooked and most of the water is absorbed. Add more boiled water if you need to. Once the consistency is that of oatmeal porridge, add a splash of plant milk, top with seeds and enjoy while it’s hot! Makes 2 servings with 11+ grams of plant-powered protein each (depending on type of fruit and seeds used)!

NOTE: If you are in a hurry in the morning, this cereal can be made the day before and reheated in the morning and it’s also good cold!
